    Andō Open’s its Doors In July

    Argentinian Chef Agustin Ferrando Balbi will open Andō, his first solo restaurant launched in partnership with JIA Group. Situated on 52 Wellington Street, Central, Hong Kong. Andō is now taking reservations from 7 July.

    Moving to Hong Kong in 2016, Balbi helmed the culinary operations of Japanese restaurant, HAKU, under the guidance of Hideaki Matsuo. During his time there, HAKU earned multiple accolades, and Chef Balbi was awarded Best Young Talent of the World 2019 by La Liste and debuted at number 87 on the list of Best Chefs of the World 2019.

    Derived from his Latin surname Ferrando, Andō in Japanese also connotes a sense of contentment, while in Spanish, it is the equivalent of ‘-ing,’ the verb participle to describe the act of doing in the present. Such complexity and multiplicity in meanings lie at the heart of the Agustin’s cuisine at Andō. Having spent his career in acclaimed restaurants in Buenos Aires and New Orleans, Balbi went east to Japan, where he spent several years honing his craft in Tokyo, including 2-Michelin-starred Zurriola, 3-Michelin-starred Nihonryori Ryugin, and 2-Michelin-starred Cuisine[s] Michel Troisgros. Aside from shaping his culinary philosophy, Balbi’s time in Japan also introduced him to his wife Yoshika. Balbi brings his wealth of experience to Andō as Executive Chef and Co-Founder, joining forces with Hong Kong-based hospitality firm, JIA Group, for his first solo restaurant venture.
