    Penicillin – Hong Kong’s First Sustainable Bar

    Penicillin – Hong Kong’s first sustainable bar with a closed-loop model is set to open in October. Helmed by Agung Prabowo and Roman Ghale and fellow co-founders Laura Prabowo, Katy Ghale. The focus will be on locally sourced and/or up-cycled innovative food and drink ingredients, whilst also looking for ways to minimise its carbon footprint.

    The team behind Penicillin will undertake research, experimentation, and multiple trials to achieve sustainability. “The ultimate mission of Penicillin is to become Hong Kong’s first “scrap-less” bar (a bar that produces minimal waste by the end of the night)”. Prabowo, Ghale, and their team will be constantly looking into ways to recycle common waste and kitchen by-products, by self-brewing, fermenting, growing, and re-using ingredients sourced locally. The bar will feature The Penicillin Lab, designed to showcase the experimental behind-the-scenes cocktail production. The main bar area will be dimly lit accentuated with earthy materials of rock, cement, and wood. Guests will also be able to see the fermentation chamber.
